This technique facilitates the storage of fruits for a longer time duration and is instrumental in preventing the flavor, nutritional characteristics and microbial spoilage of the fruits or vegetables. With the use of this technique, we can remove over 30%-50% of the water from fresh ripened fruits, whereas and final vacuum drying of the fruit pieces takes around 10-12% moisture.
