The cumin has a distinctive taste, slightly bitter but warm. There are two kinds of cumin seeds: black and white. Whites are commonly used in curries and other large varieties of food. The blacks known as Shah Jeera are more prickly and especially used in pulao (Pilaf) and biryani. This spice is widely used in Indian, Pakistani and Bangladeshi dishes, as well as in preparations from the Middle East and North Africa. They are also used in Spanish stews and American pies.
The cumin seeds are earthy, aromatic flavor, which is slightly bitter, but not hot. It gives a soil aroma. It can be used with legumes and beans and is an integral part of curry making. Uses:
Cumin is used mainly where very spicy foods are preferred. It is an ingradient of most curry powders and many tasty spice blends, and is used in stews, grills, especially lamb and chicken dishes. It gives the bite to simple rice, and beans and cakes. Small amounts can be usefully used in dishes made with eggplants and beans. Cumin is essential in spicy Mexican dishes such as chili con carne, cooked pork and enchiladas and beans.
