Chemically, Xanthan gum is a polysaccharide that has the ability to produce a large increase in the viscosity of a liquid by adding very small quantity of gum. It is used in lower concentrations, as about 0.5%. The Xanthan gum shows decrease in viscosity with higher shear rates in a process called pseudo plasticity.
