Himgiri Cauliflower is the choicest variety of cauliflower; picked at its peak, when the colour is white or creamy white and the tiny floret buds are at just the right stage of maturity. It is frozen through the most advanced I.Q.F (Individual Quick Freezing) Technique.   
  
We inspect the crops to ensure that the cauliflower plants have not developed a woody texture. We select clean, firm, compact heads and discard heads with major spots, speckles, bruises, or loose, open floret clusters. Every floret is hand trimmed because machine processing damages delicate cauliflower.


Machine cutting also results in pieces of widely varying size that do not cook at the same rate. Our florets are trimmed to an exacting specification just shy of 2 inches in length, to provide just enough of the stalk for added crispness and crunch. Each hand-trimmed floret is individually frozen to protect the sweet flavor and crisp texture.

 The entire harvesting process takes place in just a few hours, before the cauliflower has a chance to lose flavor and color. So you get beautiful hand-trimmed, fork-sized cauliflower florets that are just the right size for steaming, stir-frying or combining with other vegetables.
