Cucumbers belong to the same plant family as squash, pumpkin, and watermelon (family Cucurbitaceae). Like watermelon, cucumbers consist of mostly (95 percent) of water, which means eating a hot summer day can help you stay hydrated. However, there are reasons to eat cucumbers all year. With vitamin K, B vitamins, copper, potassium, vitamin C, and manganese, cucumbers can help you avoid nutrient deficiencies which are widespread among people eating a typical American diet. In addition, cucumbers contain unique polyphenols and other compounds that can help reduce your risk of chronic disease and many, many more.
There are hundreds of varieties of cucumber, and they come in dozens of colors, but edible types are classified as either slicing or pickling, as the growing guide from Cornell University. slicing cucumbers are grown to be eaten fresh, while pickling cucumbers are planned for the pot of brine. Slicing cucumbers are generally larger and thicker skin than stripping. Cucumbers are naturally low in calories, carbohydrates, sodium, fat and cholesterol, said Megan Ware, a nutritionist dietitian in Orlando, Florida. There are only 16 calories in a cup of cucumber with bark (15 without). You will get about 4 percent of your potassium per day, 3 percent of your daily fiber and 4 percent of your daily vitamin C. They also provide small amounts of vitamin K, vitamin C, magnesium, potassium, manganese and vitamin A.

Cucumbers can contribute to the response "cool" inflammation in your body, and animal studies suggest that the cucumber extract helps reduce unwanted inflammation, partly by inhibiting the activity of pro-inflammatory enzymes.
